- 10 large mushrooms
- 3 tablespoons olive oil
- 1/3 cup sun-dried tomatoes
- 1 onion
- 1 jalapeno pepper
- 1/2 teaspoon red pepper flakes
- 1/4 teaspoon saffron
- 4 sprigs of parsley
- 1/4 cup coarse black olives
- 1 teaspoon lemon juice
Preparation for Vegan Oven Fried Mushrooms
Wipe mushrooms thoroughly with a damp cloth. Soak the tomatoes in boiling water for 20 minutes. Carefully remove the internal parts and the stems of mushrooms. Chop tomatoes, peppers, onions, olives and parsley finely.
Now it is time to cook. First add 1 tablespoon of olive oil into a pan than cook mushrooms which you have seperated from stems until the color become brown. Then place them on the oven tray.
Take onion, chopped mushrooms inside, remaining tomatoes and parsle to another pan and add oil, start to sauté on low heat. Then turn off the heat. Add lemon juice, red pepper flakes, saffron and olives and stir all of them. Fill the inside of the mushrooms on the oven tray with this mixture. Bake for 10 minutes in a preheated oven at 350 degrees.
