Vegan Mushroom Stuffing Recipe

— 6 cups whole wheat sourdough cubed bread
— ¼ cup olive oil
— Medium-diced large yellow onion
— 5 cups assorted mushrooms sliced
— 4 stalks of medium-diced celery
— Unpeeled, cored, and medium-diced 1 Asian pear,
— ¼ cup chopped flat-leaf parsley
— 1 tsp. kosher salt
— ½ tsp. freshly ground black pepper
— ½ tsp. sumac
— ½ cup fresh cranberries cut in half
— 1 1/2 cups vegetable broth
Preparation for Vegan Mushroom Stuffing
First of all; take sourdough bread cubes and place them on the large rimmed oven tray. Bake them for 15 minutes in preheated 300°F oven until they become crusty and little dry out. Now you obtain crusty bread cubes! Now it is time to preapare vegatables and spices.
Take a sauté pan and add some olive oil. Add mushrooms, onions, cranberries, salt, veggie broth, sumac and pepper into pan. Cook this mixture approximately 10 minutes on the medium heat until all of them softened. You can control softness with fork.
Pour the bread cubes that you have prepared in a large bowl. Add parsley, Asian pear, and celery on bread cubes. Take a large baking pan add some oil to prevent sticking. Pour this bread mixture on baking pan. Bake 30 minutes in 350°F oven.
Mix all of them and serve with fresh parsley. Enjoy your meal.
