- 1/3 cup olive oil
- 1/4 cup granulated sugar
- 1/3 cup brown sugar
- 2 teaspoon almond extract
- 1 cup white whole wheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2-3 tablespoons of almond milk
- 3/4 cup slivered almonds, chopped
Directions for Vegan Almond Cookies:
Take sugar and oil in a mixing bowl. Then mix it thoroughly until smooth. Continue stirring, adding the almond essence.
Take a large separate bowl. Add flour, salt and sugar in it and mix them properly.
Then add sugar and oil mixture and the almond milk. If the consistency of the dough too hard, you can add a little more almond milk to obtain proper consistency. Then add chopped almonds.
Cover the baking dish with wax paper. It is important tip for almond cookies. This prevents the cookies from sticking to the base of baking dish.
Create small and smooth balls from the dough. Place that rounded balls on the wax paper leaving space between them. Volume of cookies will increas when cooked. If you leave less space they stick together.
